Parchment drying process is important for the coffee to contain its full flavor and aroma inside because it affects the quality and contents.

Different drying methods include mechanical drying, solar drying on patios (most common), African beds, and a greenhouse (kinda go together with African beds). Among other methods, the African bed has several advantages such as less damage to the parchment when raking, better ventilation on the bottom (less chance of mold formation), even drying, and better heat/temperature control.
When most of the producers use patio to dry their wet parchment, the problem arises from the heated cement floor which absorbs the heat from the sun. Without a careful management, the parchment may dry too quickly. To prevent this problem, we started this project with our producers.

The first farm to start was Mr. Serestino’s. 11 producers from his group of this group and E-Cafe Chiapas’s staff worked together to make one but long African bed frame.

After fixing the frame on the rooftop patio, we made an African bed of 1.6m X 25m size. This is a size that can dry 15 bags of parchment.

Despite the rain, all farmers joined forces to create the African bed.
