Wet Processing at Night in Pena Bermeja

On the way back from Las Flores, we made a quick trip to Pena Bermeja to receive some samples.

This time we saw a rare sight. The pickers were coming back to wet process the coffee.

Because we visit the producers during the day most of time, we don’t get to see the wet processing too often. The cherries were picked very well!

Some producers would collect the coffees and leave them until the next morning and pulp. But we told them that even though the day is longer by pulping at night, we have to process the coffee right away so we could prevent the coffee from overnight fermentation.
